What you’ll need:

1 cup raw quinoa

2 cups water

1 garlic clove

2 limes, zested

2-3 T. lime juice

2 T. green onion or shallot, finely chopped

½ tsp. jalapeno pepper

½ tsp. cumin seeds

½ tsp. coriander seeds

¼ tsp. dry mustard

1/3 cup olive oil

1 red, yellow, or orange bell pepper, finely chopped

6 dried apricots, finely chopped

½ cup dried cherries or cranberries

¼ cup toasted pine nuts

2 T. fresh cilantro or chives, chopped

Salt to taste

Quinoa with Dried Fruits and Nuts

Serves 8

Quinoa (pronounced KEEN-wah) is an ancient grain with a much higher protein content than most grains. It can be purchased at most grocery stores.

This dish can be made ahead of time and can be used as a bed when serving chicken or fish. The vibrant colors not only make it aesthetically pleasing, but it also contains a variety of healthy nutrients.

Here’s how:

1. Rinse the quinoa in a bowl of cold water. Bring water for the quinoa to a boil in a small saucepan. Season the water with salt. Add quinoa, reduce heat to low, cover the pan, and simmer for 12 to 15 minutes. Let stand for 5 minutes.

2. While the quinoa is cooking, combine the ingredients for the salad dressing (garlic, lime zest and juice, green onion, jalapeno pepper, cumin, coriander, dry mustard) in a large bowl. Slowly whisk in olive oil.

3. Toss the cooked grains with a ¼ cup of the dressing. Add the dried fruits, nuts, and cilantro or chives. Taste the salad and season it with salt. Add enough of the remaining dressing to coat the grains and fruits. Serve as a side dish or use it as a bed for an entrée.
