What you’ll need:

1 ½ pounds Brussels sprouts

3 T. olive oil

¾ tsp. kosher salt

½ tsp. freshly ground black pepper

Roasted Brussels Sprouts

This winter vegetable surprises everyone with its delicious taste when it is roasted and crisp with kosher salt. Brussels sprouts are an important dietary source of many vitamin antioxidants, including vitamins C, E, and A (in the form of beta-carotene).

Here’s how:

1. Preheat the oven to 400 degrees.

2. Cut off the ends of the Brussels sprouts and pull off any dead outer leaves. Mix sprouts in a bowl with the olive oil, salt, and pepper.

3. Place vegetables on a baking sheet and roast for 35 to 40 minutes. Stir them occasionally to brown evenly. They are finished when they are crispy on the outside and tender on the inside.
